4. I'm going to hold off to submitting to schools until my MCAT scores are in. Thoughts about that? Open to MD and DO.

It'll be slightly late for MD you're submitting in September. Completely fine for DO though (late for DO = thanksgiving).

I think you might actually be able to get into a DO program with a 495 simply because of your grades and military service but of course it’s better to aim for higher score. If I were you I’d aim for your state MD schools since Texas is notorious for its preferential treatment for unstated and TCOM(DO). I’m fairly sure you can apply to TCOM on TMDAS
